Brunch can be stressful to plan especially when deciding on the menu. Sometimes it is hard finding the right balance between breakfast and lunch because it’s a little of both. Try this easy recipe for your next brunch or even lunch. It is sure to be a crowd pleaser.
3 Chicken Breast, 1/2″ cubed
2 cups Penne Pasta, cooked
1 tbsp Olive Oil
1 cup Croutons
1/2 cup Parmesan Cheese
1 cup Romaine Lettuce, chopped
1 Tomato, chopped
1 cup Caesar Dressing
Spices: Black Pepper and Salt, to taste
Cook pasta as directed on package then drain and place in a large bowl. Add olive oil and lightly toss until well coated. Season chicken breast with salt/ pepper then sear over medium heat with olive oil. Cook chicken thoroughly then place in a separate bowl and let cool.
Add romaine lettuce, tomatoes, half of the parmesan cheese and chicken to bowl with pasta. Lightly toss and add caesar dressing, salt/pepper and toss once more. Feel free to add more dressing then refrigerate until needed.
Serving time… Line serving platter or bowl with a few romaine leaves before transferring pasta to dish. Top pasta with remainder of parmesan cheese and croutons right before presenting to guest.
