Chicken with a Mushroom Cream Sauce

This is a simple yet delicious dish that can be prepared any day of the week

Ingredients

6 chicken thighs
1 cup button mushrooms, sliced
1 cup milk
1/2 stick butter or margarine
2 tbsp Olive Oil
2 garlic cloves, smashed
Spices: black pepper, kosher salt, paprika and garlic powder, to taste
Chives, sliced
1/4 cup Slurry= 1/4 cup water +1 tbsp. cornstarch or flour
Preheat oven to 350 F then season chicken with spices to your liking. Be careful to not over salt chicken. On the stove top, heat olive oil over medium heat in a cast iron pan or sauté pan. Place chicken in pan, presentation side down (skin side) and sear for 3-5 minutes. Flip chicken and add smash garlic cloves, cooked for an additional 3 minutes then place in over for 10 mins uncovered.
Remove pan from oven and place chicken on a plate. Keep chicken renderings (fat) in pan and place over medium heat on stove. Add mushrooms, season with salt/ pepper and sauté until tender (about 2 mins). Stir in butter until thoroughly melted then slowly whisk in milk with slurry. Season lightly and simmer on low for 10 mins which will allow the sauce to thicken. Occasionally stir to prevent sticking. Add chicken back to pan, cover and cook on low for 5 minutes while basting chicken.
Remove from heat and served with your favorite veggies or carbs.
