Island Fried Rice

This recipe calls for Spam but can be substitued with ham if you’re not keen on Spam. This potted meat became popular in Hawaii during WWII due to it’s portability and no need for refrigeration.

3 cups Jasmine Rice, cooked
1 can (12 oz) Spam or Ham
1 can (8 oz) Pineapple Chunks
2 Eggs, beaten
1/2 cup, Green Onion, sliced
1/4 cup, Oyster Sauce
1 tbsp, Olive Oil or Conola Oil
Spices: Black Pepper, Salt and Garlic Powder

Rice must be cooked prior to starting this recipe. Heat oil in a wok or large sautee pan over a medium heat. Sautee spam for two minutes then add pineapple while continuing to sautee for an additional two minutes. Stir in half of the oyster sauce then slowy stir in rice. Add remainder of oyster sauce and season. Go light on salt because the oyster sauce adds salt.

Make a hole in middle of rice and pour in eggs. Wait 30 seconds and start to incorporate in rice. Adjust spices if necessary, remove from heat and stir in green onions. Serve with spare ribs or eat as an entree. Either way you can’t go wrong so Happy Eating!!
