It doesn’t have to be a holiday or the state fair for you to enjoy a good turkey leg. This is a simple recipe that doesn’t mask the natural flavor of the turkey leg but enhances it.
2 Turkey Legs
3 cloves Garlic, minced (cloves = the individual pieces that detach from the bulb)
3 tbsp. Cayenne Pepper
2 tbsp. Black Pepper
2 tbsp. Garlic Powder
2 tbsp. Kosher Salt
2 tbsp. Olive Oil or Vegetable Oil
1 tbsp. Pickled Jalapeno, chopped
1/4 cup Water
Prep:
Combine spices, jalapenos and garlic in a small bowl. Cut small slits into the turkey leg and stuff with spice mix. Repeat until turkey leg is seasoned on all sides. Refrigerated until ready to cook.
Cook:
Preheat oven to 410F. Place turkey legs in a oven safe dish and rub turkey with oil. Add water to bottom of pan then place in oven for 10- 15 minutes to sear. Turkey legs should start browning before lowering oven temp. Baste turkey, cover with aluminum foil and lower oven temp to 350F.
Continue to cook for 20- 30 minutes (baste again after 10 mins.) or until the internal temperature of the turkey reaches 160F. Turn off oven, remove aluminum foil and allow turkey to sit in oven for an additional 3- 5 mins. This will allow skin to crisp again and turkey to reach the internal cooked temperature of 165F. Remove from oven and allow to rest before carving or serving.
