Some people who don’t like brussels sprouts may have never tried this micro cabbage looking vegetable. I know for me, the only way I can actually enjoy this vegetable is by sautéing or roasted which is very simple. If you are looking to incorporate more vegetables in your diet, try this simple recipe.
1 lb Fresh Brussel Sprouts, sliced
1 Vine Tomato (Roma works as well), seeded and chopped
1 tbsp Olive Oil + 1 tbsp for pan
Spices: Black Pepper, Salt and Garlic Powder, to taste
Slice fresh brussel sprouts then toss in olive oil along with spices. In a sauté pan, heat olive oil over medium heat. Add brussels sprouts and sautéed for 3- 5 minutes. Once sprouts began to brown and become soft, add tomatoes and sautéed for another 2- 3 minutes. Adjust spices if necessary then remove from heat. Serve as a side to your favorite main dish and Happy Eating!!
