Soup is one of those foods that brings comfort to many and has been around since ancient Roman days. I’ve never been a fan of soup because I have this weird thing about drinking hot liquids. Recently I’ve been wanted homemade soup so I worked on this simple recipe. Try it and let me know what you think.
Ingredients:
1 lb. Italian Ground Sausage
1/2 Onion, sliced
1/2 Bell Pepper, sliced
2 Garlic Cloves, minced
2 Zucchini Squash, sliced
2 Potatoes, cut into 8ths
2 cups Fresh Spinach
2 cans Beef Stock/ Broth, 14.5 oz cans
2 cups Water
1 can Stewed Tomatoes, 14.5 oz can
1 can Northern White Beans
1 tbsp Olive Oil
Spices: Kosher Salt, Black Pepper and Garlic Powder, to taste
Season Italian sausage with spices and roll into small (bite size) meatballs. Heat olive oil in a soup/ stock pot over medium heat and cook meatballs for 3- 5 minutes, searing on all sides. Remove meatballs from pot then add onion, bell pepper and garlic sauteeing for 3 minutes. Saute until onions become translucent then add stewed tomatoes and continue to cook for an additional 2-3 minutes. Stir in beef stock and water. Season with spices, add potatoes and simmer for 20 minutes. Stir occasionally.
Add zucchini, northern white beans, meatballs and adjust spices while continuing to simmer for an additional 10 minutes. Turn off heat and stir in spinach, adjust spices if necessary and let sit for 5 minutes before serving. Spinach will wilt from temperature of the soup and not overcook. Serve with crusty bread, crackers or enjoy soup as is.
