“Oyster” Mushroom Poboy

When one thinks of Poboy, a traditional sandwich with meat or seafood comes to mind. Poboy (Poor Boy) name was coined in the early 1900s in New Orleans, LA. Over the years, there has been many variations of the poboy sandwich. Some restaurants have started to label the sandwich “Louisiana Style Poboys” in an attempt to show some form of authenticity to entice their patrons. This recipe is simple, full of flavor and completely meatless. The oyster mushroom has a mild flavor that can closely resemble seafood. One bite of this sandwich and you will forget it’s meatless. Ingredients:
1/2lb. (8 oz) Oyster Mushrooms, fresh
1 cup Broccoli Slaw, found in the produce aisle
1 Tomato, seeded and chopped
Pickle Slices, optional
Fish Fry Mix Recipe or Store Purchased Mix
Creole Remoulade Sauce Recipe
Vegetable Oil for Frying
1/3 cup Butter, melter
Bread Recommendations:
French Bread, cut into 6 inch pieces
4 Bolillo Rolls
4 Hoagie Rolls

Oyster Mushrooms can be fried or cooked in an air fryer. Preheat air fryer to 350 F or heat oil in a small sauce pan. If you are using a store fish fry mix, add 1 tbsp of flour per one cup of mix used. Spices are not needed for the mushrooms because the fish fry mix contains flavor. Seasoning the mushrooms will cause a salty flavor after fried.

Dredge mushrooms on both sides in fish fry mix. Place in hot oil and cook for both sides for 1-2 minutes or until golden brown. Allow to drain on paper towel. Air Fryer: Place mushrooms into prepared air fryer, cook for 3- 5 minutes or until golden brown. You may want to flip mushrooms midway through the cooking process.

In a medium bowl, mix broccoli slaw and 1/2 cup of remoulade sauce. Cut french bread or sub rolls on the side leaving a hinge cut. If you’re using bolillo rolls, cut top of roll down the center. Bolillo rolls are easier to stuff. Brush bread halves with butter and toast by placing face down in a hot pan. If using bolillo rolls, place in oven for 2- 3 minutes or skip this step.

Spread remoulade sauce over toast halves. Start the layering process with oyster mushrooms, broccoli slaw and top with tomatoes. Serve with your favorite side and enjoy.
