I think we’ve all heard of #TacoTuesday by now but of course it’s not the only day you can enjoy tacos. The history of tortillas date back to around 10,000 years BCE but “tacos” as we know it was first introduced to the states in the early 1900s. To date, there are so many taco variations that it can be hard to keep up. This is a easy chicken taco recipe that has a little kick. Try it out and of course, let me know what you think. Prep Time: 15 mins
Cook Time: 60- 90 mins
Ingredients:
2 medium Chicken Breast or 1 large Chicken Breast
1 can Chipotle Peppers in Adobo Sauce
1 1/2 cup Water
1/2 cup Onion, chopped
1/4 cup Cilantro, rough chopped
2 Garlic Clove, chopped
1 tbsp Lime Juice
Corn Tortillas
Choice of Toppings or/and Salsas
Spices: To Taste
Black Pepper
Garlic Powder
Kosher Salt
Using a slow cooker, add all ingredients except tortillas and lime juice. Season with spices, cover and cook on low until chicken is cooked. This step can take anywhere from 45 mins to 1.5 hour. Internal temperature of chicken should reach 155 F before removing from slow cooker. (No slow cooker? Use a soup pot and cook on low)
Remove chicken and place on side until needed. Using an immersion blender, blend all ingredients in the slow cooker. If you don’t have an immersion blender, a food processor can be used but be careful not to overfill. Season with spices, add lime juice and stir. Shred chicken then stir back into slower cooker. Continue to cook for 10- 15 minutes. Turn slow cooker to warm mode and start preparing your tacos.
Heat a comal or frying pan over medium heat. Heat tortillas on both sides until slightly golden brown . Use your favorite toppings/salsas on the tacos and enjoy. Try a one or all of the salsa recipes below.
