This is a simple no-fuss recipe that actually taste great. Cherub tomato is a type of grape tomato that is used mainly for salads. If you can’t find cherub, any grape tomato can be used. Prep Time: 20 mins (This includes pasta cooking)
Cook Time: 15 mins
Ingredients:
12 oz Pasta, cooked and drained (I used a tube pasta but any pasta can work.)
1 cup Cherub Tomatoes or any Grape Tomato , cut in half
1 tbsp Garlic, minced
1 tbsp + 1 tsp Fresh Basil, chiffonade
1 tbsp Olive Oil
Parmesan Cheese, for garnish
Spices:
Black Pepper, to taste
Kosher Salt, to taste
Using a saute pan, add olive oil over medium heat. Add tomatoes and saute for 3- 5 minutes. Tomatoes should start to blister and becoming soft. Season with salt and pepper then stir in minced garlic. Continue to saute for up to 3 minutes and add 1 tbsp of fresh basil. Stir in cooked pasta, adjust spices and combine well. Continue to saute for up to 5 minutes which will give the pasta time to heat through and flavors to combine. Remove from heat and garnish with parmesan cheese and remainder basil. Serve with a salad or enjoy as is.
