Catfish Coubion (Coo bee On)

Coubion also known as Couvillion or Courtbouillon depending on the region in Louisiana is a roux- tomato based fish stew. Many people in Louisiana opt to use a firmer fish such as garfish because catfish becomes delicate when cooked. This dish is just as good with catfish since it is readily available in most areas. You can also try this recipe with redfish or snapper, just adjust cooking times with fish.

Cook Time: 45 min to 60 min

Ingredients:
1 lb Catfish Fillets, cut in half
2 cans Tomato Sauce
1 can Crushed Tomatoes
1/2 can (3 oz.) Tomato Paste
6 cups Water
2 Garlic Cloves, chopped
Roux:
1/2 cup Flour
1/2 cup Vegetable Oil
Holy Trinity:
1 cup Onion, chopped
1/2 cup Bell Pepper, chopped
1/2 cup Celery, chopped
Spices:
Black Pepper, to taste
Cayenne Pepper, to taste
Garlic Powder, to taste
Kosher Salt, to taste
Seasoning Salt (optional), to taste

Season catfish fillets and cut in half if fillets are between 10- 12 ounces. If you are able to get smaller fillets around 6 ounces, I would recommend. Using a dutch oven or a soup pot, heat vegetable oil and flour to begin the roux process. Constantly stir mixture to prevent from burning. Cook until roux has reach the color of peanut butter and gives off a nutty aroma. The consistency at this stage should be similar to tomato paste. This process can take anywhere from 10- 15 minutes depending on humidity.

Once roux is ready, stir in tomato paste. Combine well then stir in tomato sauce. Add the holy trinity along with garlic to mixture and of course stir. Pour in water and mix until roux base has completely dissolved. Season with spices and bring to a simmer. Cover partially with lid while stirring occasionally. Allow to simmer for 30- 35 minutes giving liquid time to slightly cook down and thicken. Add catfish fillets and give a slight stir. Remember, catfish becomes very delicate and tender as it cooks. Continue to simmer for 10- 15 minutes with an occasional gentle stir. Adjust spice level if necessary.

Remove from heat and allow to set for a few minutes before serving. Serve over white rice and Happy Eating!
