Food historians believe that egg rolls were evolved from spring rolls and developed as part of Cantonese cuisine. What I can tell you is that egg rolls are delicious when done right. Egg rolls are easy to make at home and this recipe is a good starting point.
Prep Time: 10 mins
First Cook Time: 10 mins
Cooling Time: 10- 15 mins
Frying Time: 10 – 15 mins
Ingredients:
2 cups Cole Slaw Mix (dry)
1 cup Bella or White Mushrooms, sliced
1/4 cup Green Onion, sliced
2 tsp Fresh Ginger. minced
1 clove Garlic, minced
1 tbsp Sesame Oil
1/4 Cup Soy Sauce
1 package Egg Roll Wrappers
Egg Wash, optional
Sweet & Sour Sauce Recipe
1-2 cups Vegetable Oil or Peanut Oil, for frying
Spices:
Black Pepper, as needed
Kosher Salt, as needed
Garlic Powder, as needed
Filling Preparation
Heat sesame oil in a wok or deep pan. Add garlic and ginger then saute for a minute or two as the seasonings become aromatic. Add mushrooms, saute for 2- 3 minutes then add the cole slaw mix. Season with spices and continue to saute for 5 minutes. Pour in soy sauce along with green onions and mix well. Saute for another 2- 3 minutes then remove from heat. Transfer mixture to a sheet pan or bowl and allow to completely cool.
Rolling
Lay out egg roll wrapper and use a pastry brush to place a little egg wash around the edges of the wrapper. This will create a seal when rolled. Water and your finger can substitute for the egg wash and pastry brush. This step is done to prevent the egg roll from unraveling while cooking. (Egg roll explosion while frying is not fun.) Place one to two tablespoons of the mixture a little under the center of the wrapper. Roll the wrapper starting from bottom up. Give one roll then fold in sides. Do not overstuff because the egg roll can rupture while frying. Continue to roll until complete. Place in a single layer on a tray or plate until needed.
Frying
Heat one to two cups of cooking oil in a frying pan or wok. You do not need a lot of oil to fry egg rolls, just enough to fry one side at a time. Egg rolls float through out the frying process. Fry the egg rolls in a single layer on each side for about 2- 3 minutes or until golden brown. Do not over crowd pan when cooking. Remove from oil and drain on paper towel. Serve with Sweet & Sour sauce or enjoy as is.
